Chef Alexandre Bordeaux will focus on teaching students how to formulate their ganaches recipes, not only to have a longer shelf life, but to achieve the texture they want. While Chef Melissa will focus on teaching how to achieve a beautiful glossy look on molded bonbons. In this hands -on Class students will learn different spraying techniques as well as making a variety of molded Bonbons.
